My baking diary during the recent full lockdown

I baked a lot during the 4th waves of the pandemic in Saigon. Last year the situation seemed in control, we used to have some freedom but starting from early May this year, it’s getting bad , really bad when we have nearly a thousand cases in our city.

These days we are not allowed to go out if without any proper reasons (like for groceries, medicines, hospitalization…), without it – if you are caught by a police – a fine of approx. 140 USD! I can’t cycling around the city as I used to do. Now I just stay at home! I have to do something! I bake and baked a lot: the baguette, the sourdough Russian black bread, sourdough semolina bread…those stuffs that I can store for long!

The “healthy” cookies

Cookies are the ones – can be stored for long! So many cookies recipes on the net, but after checking what I have in the kitchen – I can do two kinds of cookies: walnut with chocolate chips and another one – oatmeal, coconut shreds with “quatre epices” (i.e four flavors – cinnamon, pepper, cloves, nutmeg)

So today I’m sharing the recipes for my two Full-Lockdown cookies.

  1. Preparations for the walnut cookies with chocolate chips
    • Unsalted butter 120 gr.
    • Granulated sugar 70 gr.
    • Brown sugar 70 gr.
    • All purpose flour 185 gr.
    • Cornstarch 9 gr.
    • Large egg 1 piece
    • Salt 3 gr.
    • Baking soda or powder 5 gr.
    • Vanilla 6 ml.
    • Walnut 300 gr. (chopped)
    • Chocolate chips 100 gr.
Cream the butter with the brown sugar and granulated sugar together well
Beat in the egg and the vanilla
Add the flour, salt, baking soda to the butter mixture, stir until blended
Stir in the chocolate chips and walnuts
Shape them into a ball and place onto a parchment lined baking tray

I didn’t bake right away, so I keep the cookies balls in the fridge for overnight, but if you bake, you also may need to chill it at least for one hour or the cookies can be frozen for baking later.

2. Preparation for the oatmeal cookies

The recipe for the oatmeal cookies are very similar, but instead vanilla I add “quatre epices”

The recipe for the oatmeal cookies are similar to the walnut ones, but instead of vanilla I add the “quatre epices” which contains 4 flavors: cinnamon, pepper, nutmeg and cloves. I added only 5 gr. in this recipe, but I will definitely double it next time as the smell goes well with cookies! And instead of nut, chips I add ,of course, the oatmeal, have dried coconut shreds leftover in my fridge, but next time I’d prefer to add or to replace coconut shreds with dark raisin.

Bake at 180oC for 30 minutes until golden brown
The cookies tastes so good, especially with the coffee or just good hot tea!

Ok, my baking diary still continues for at least the next two weeks, because we are still under the full lockdown, or even longer! I do hope that we quickly control the situation, get vaccinated ASAP so we can go back to our routine life! Anyway this pandemic is happening everywhere, I do wish everyone the best of luck, the good health and don’t forget to enjoy the baking! Cheers

  1. Great! Thanks anh Nguyên for sharing! Should we also leave the cookies in the fridge over nite with the Oatmeal version anh? And what’s the different if we just keep it in for an hour? as you said?

    1. Same for oatmeal! There is no difference, sometime you don’t need to bake within a day, as you may have some leftover, you keep it for few days in the fridge or froze it for longer, on the day of baking, you leave it at the room temperature for half hour before the oven! Happy baking!
